Phylo bowl with smoked snoek or biltong



Make a phylo bowl with sheets of phylo that you brush generously with melted butter. Line a muffin tin or ramekin with the buttered  phylo. Bake in the oven @180 degrees until golden brown. Take out of the oven and remove from muffin pan, let it cool down.

Make a filling of either smoked snoek or balsamic biltong. You can serve any filling even a salad in the phylo bowl.

Smoked snoek : Remove all the “bones” from the snoek. Flake the snoek, add cream cheese (not cottage cheese), fish spice,salt, freshly ground black pepper and lemon juice to taste. Use +- 300g for 4 people with 1 tub cream cheese. Serve in phylo cup.Garnish with finely chopped chives.

Balsamic biltong : Soak thin slices of biltong overnight in balsamic vinegar. Drain the vinegar, mix the biltong into a tub of cream cheese. Season with salt, freshly ground black pepper to taste. Serve in phylo cup and garnish with biltong powder.
